Heath Brownies

Today I got inspired. So I baked, which rarely happens.

Brownies

What you’ll need:

1/2 cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
a handful of whatever candy you have (Heath, M & Ms, nuts, or nothing at all is fine)

Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.

In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan. (I also added a tablespoon of brewed coffee, because it generally enhances the chocolate flavor).

Bake in preheated oven for 25 to 30 minutes. Do not overcook.

The inspiration to bake something on one of the hottest days of the summer likely came from the fact that I’m trying to “live up” my last few days of being unemployed. These chocolaty delights, combined with lots of time at the pool and a weekend out of town ought to be a great book end to these long 19 weeks. Onto new things…
