If you’ve never had Roesti (Swiss fried potatoes), I suggest you find a place that serves it (them??) and head there immediately.
When we visited New Glarus last week, we dined at the most amazing restaurant – Glarner Stube Restaurant – after a recommendation from the folks at the brewery. You know me, I like anything that is a hashbrown, which is basically what Roesti is – giant hashbrowns with rich Swiss cheese mixed in the middle. I’m going to have to figure out how to make this at home. If you have a recipe, don’t hold out on me, send it my way!
Besides the delicious potatoes, the menu was filled with all sorts of delicious options. We both had a bowl of the beer cheese soup, which was like no beer cheese soup I’ve had before. It was a light brownish color and was very rich and filled with pieces of sausage, potatoes and carrots. I was already full so I simply ordered what turned out to be a really good sausage, while Jeff ordered the Wiener Schnitzel (veal cutlets, breaded and pan fried). Our meals were served up with complementary New Glarus beers, which is where we actually fell in love with the Enigma.
Other menu items included: Swiss favorites like meatballs, chops, steaks, sandwiches, salads and more. It was a cute little place.
It was nice to see how all the local establishments supported the brewery. I found it heartwarming.
Given the opportunity, I’d definitely head to Glarner Stube again. It was delicious, quaint and the service was great. Plus, our bill (which did include an accidental extra pour, which meant four beers total) was only about $33.

I agree – Glarner Stube is wonderful. But don’t overlook another gem in New Glarus – Deininger’s (I think I spelled that correctly…) Wonderful house on the hill corner a block or so from the main streets. Wonderful setting, servers, shrimp tempura to die for, great wine list, wonderful French, German, Swiss entrees (our steaks and duck, along with red cabbage and spaetzle were amazing!) Give that a try next time in New Glaurus. And while you are at it, on the way down don’t pass up the Schoolhouse Restaurant in the tiny town of Paoli – really worth a stop!!
I am also a huge fan of the Glarner Stube in New Glarus. I took my father there in November and he fell in love with the Roesti potatoes and the creamed saurkraut. Any luck on finding a recipe for the potatoes?
