Cauliflower

Posted by on March 10, 2011

Remember when you were a child and you didn’t like a particular food and your mother would say, “You’ll like it when you’re older.” Or, my other favorite: “You don’t know what you are missing.”

Good. Glad I wasn’t the only one.

The two foods that come to mind for me are meatloaf and tuna casserole. While you still could not pay me enough money to eat a slice of meatloaf, I do like tuna casserole. Well, if it’s prepared right – from scratch with good ingredients. Like the kind made at Pilora’s in Oshkosh.

A food that did not fall on that list, but that I didn’t ever care much for was cauliflower. I remember it as the over-steamed vegetable with little flavor. I’d usually eat it, because it came in that mixed bag of veggies most moms made in the microwave.

In the last couple of months, however, I’ve really grown to like cauliflower. I really, really enjoy roasting it in the oven with a little olive oil, salt and pepper. It’s like candy and I’m pretty sure we’ve been known to eat an entire head of it before it even makes it to our plate. Popcorn-style. And just yesterday I found myself eating it raw with a little dip as a snack. Who am I?

Maybe your taste buds do grow, develop and change with age. Or maybe I just like cauliflower that hasn’t been sitting in a bag frozen for months.

So tell me, what’s are the foods you swore you’d never eat and now like?

Cauliflower was also on my list, although I LOVE it now! But those blasted brussel sprouts…. I just can’t do it! I swear they smell like feet!

I’ve never been a fan of cauliflower, either, but this Mediterranean restaurant by me makes the most amazing cauliflower dish ever. So good.

Oddly enough, scientists have found that it’s not that our palettes develop but rather that our tastebuds become dimmer. The reason most of us hate veggies when we’re young and don’t really mind them when we get older is that we can taste less of the bitterness as we age than we could when we were younger. So vegetables truly are disgusting, it’s just that we can’t tell anymore when we get older. :)

Growing up, I hated asparagus. Looking back, I realize that’s because my mom would always steam it, so it would just have that gross asparagusy flavor. Now I love it – but roasted or grilled, which impart a much less potent flavor.

Broccoli, cauliflower, lots of other veggies. I was a tremendously picky eater as a kid.

I hated broccoli as a kid, but now I LOVE it. Roasted is my fav, with a little olive oil, salt and pepper. Delish.

What I still hate to this day though, is chipped beef on toast. Blech. I still can’t stand the sight (let alone the smell) of it.
