Tonight’s dinner inspired by our (wanna be) BFF Alton Brown.
We are burger people. We probably prepare them for dinner a few times per month, especially in the summer. For a couple of reasons, I guess. It’s cheap. It’s quick. And you can season them in different ways to make them slightly different than the last time. So tonight, we decided to mix grilled cheese and hamburgers. I give you, The Grilled Cheese Burger:

What you’ll need:
ground beef
salt
pepper
garlic powder
any cheese you have on hand or like (we used a combination of tomato basil cheddar, sharp cheddar, Parmesan and Swiss)
red onion
regular bread
Simply form the ground meet into patties and cook for about 10 minutes (or until they are done to your liking) in a cast iron pan. Leave the pan hot, you’ll need it again later.
Saute the onions in their own pan in a little olive oil. Drain off the fat on a paper towel. I also patted the burgers with a paper towel to get the excess fat off after they were fully cooked.
Butter both sides of a piece of toast, just like you would to make grilled cheese. Assemble your sandwiches by first adding a little shredded cheese, then onion, then the burger, then a little more onion and cheese, top with another slice of buttered bread. Place in hot pan. Top with a piece of foil and place the still hot cast iron pan on top, press down. Cook on each side until brown.
Serve.
These turned out really well and it was a nice twist on burgers. Plus, it allowed us to use up random cheese we had left over in the fridge AND we didn’t have to run to the store to get burger buns, which in my mind equals a perfect Sunday night meal. And the best best part, Alton would be proud of us for the double useage of the cast iron vessle.

We might have went a tad overboard on the cheeses. Like I said, we were just using what we had in the fridge. You could tell it was very cheesy but if I didn’t know what cheeses were used I probably wouldn’t be able to name them all. Still, so good!
